Ingredient Information

- Strawberries: Use fresh strawberries and look for the largest strawberries that also look the best. Avoid using any that are bruised or mushy.
- Chocolate melting wafers: You can use milk chocolate or dark chocolate although, I find the milk chocolate gives a better turkey coloring. You can also use a bit of melted white chocolate to dip the ends of the legs if you wish.
- Mini Marshmallows: You can use white or colored since they will be covered in melted chocolate and not seen.
Storage Information
Refrigerate leftover strawberry turkeys in an airtight container away from moisture for 1-2 days. You can also place a paper towel inside the bottom of the container to help prevent sticking and excess moisture.
Getting Chocolate to Stick to Strawberries
The key to getting melted chocolate to stick to strawberries is making sure they are completely clean and dry. I like to wash mine the night before and lay them on paper towels to dry overnight. Alternatively, you can wash them, place them in the fridge, and remove them from the fridge several hours before dipping them in chocolate to allow them to dry. Any moisture on the strawberries can cause the chocolate to seize, become lumpy, and fail to stick properly.

The Perfect Chocolate Drizzle
Melting wafers are usually easy to work with and create a nice drizzle when melted properly (I prefer Ghirardelli brand). However, if you prefer a thinner consistency or are using chocolate chips, you can add 1 tablespoon of vegetable oil to the melted chocolate for an easier drizzle. Alternatively, you can use ½ to 1 teaspoon of melted coconut oil per cup of chocolate chips. Start with ½ teaspoon and add more if needed to achieve the desired consistency. The coconut oil helps thin the chocolate, making it smoother and easier to drizzle without becoming too runny.

Chocolate Covered Strawberry Turkeys

Ingredients
- 12 large strawberries
- 1 bag milk chocolate melting wafers 10 oz
- 36 mini marshmallows
- 24 small pretzel sticks
- 1 tablespoon vegetable oil optional, to thin the chocolate
Instructions
Wash and thoroughly dry the strawberries. Set them aside.
In a microwave-safe bowl, melt the chocolate in 20-second increments, stirring in between until smooth. Add vegetable oil or coconut oil if you want a thinner consistency for dipping. Insert a toothpick or skewer into the top of each strawberry for easier dipping.
Break pretzel sticks in half for the “legs.” Dip one end of each pretzel stick into chocolate, then attach a mini marshmallow to create the “turkey legs.” Cut one mini marshmallow in half and set aside.
Dip the side of each marshmallow “leg” in chocolate and press two onto the front of each strawberry. Then, dip the halved marshmallows in chocolate and place them above the “legs.” You may need to hold these in place for about a minute. Dip the strawberry into the melted chocolate until fully coated. Place on parchment paper to set.
Once the chocolate hardens, your Strawberry Turkeys are ready! Serve immediately or refrigerate until you’re ready to enjoy.
